This has been a big year for the indianapolis chapter of food not bombs.

We are writing to say thank you to a few of the businesses, groups and people who have helped us out this year. Indy's FNB was reformed last year by James Mostcato, Xander Gueryn and others. Since then, we have provided a free meal Saturday at noon at the American Legion Mall at Pennsylvania and St Clair for anyone who ants to come, serving between 20 and 80 people a week.
We also provided meals and groceries to the west side on Sundays at the Worker Justice Center, and helped cater a number of  special events including Moral Mondays, (power and light protest), WarmFest, (burning man event) [list other events]
We were able to find  kitchen space to use, and our 2015 plans focus around trying to rent to buy an old church in Fountain Square where we can build a proper kitchen of our own.

i went to the post offie for the medpae form. my C key is stuk.

my starter seemed to be going out so i went home instead of doing laundry.

dove, vacuumed, took out trash and compost, washed dishes, tossed moldy bread. sorted potatoes. put away dishes.

a couple emails. watered the plants, sorted dead plants.

still to do: sort fridges, revise lease option, make a comic, take 48 to 2nd helpings.

best case scenario.

20 rooms x 300/mo = 6,000/mo - 1000/mo for utilities = $5000/mo at full capacity + 700 church rent =
5700/mo - 700 interest payment, = 5000/mo x 15 months = 75K  + deposits = 85000.

so we would need to borrow 25K to pay off at end of year. doable.

this assumes full paid occupancy which is an unreasonable assumption.

also assume 9 people at 2226 x $300/mo = 2700/mo - 1000 rent - 400/mo ut. = 1300/mo toward equity = 13000 for the year (or 15000 if x 12) so only need 10K more, which we could pass the hat or i could loan.

this assumes no income from rent parties, art gallery, church rental for weddings, etc. it would be possible to budget $800/mo from such functions, resulting in paying off whole thing in 1 year.

average scenario:

15 rooms at 300/mo = 4500/mo - 1000 utilities = 3500/mo  x 12 months = 42,000
+ 500/mo carryover from 2226 = 6000 =48,000 means balance of 27000 at end of year to excercise option.

means we have 12 months to raise about $2000 each to pay it off in cash, or e borrow it as a 12 month business loan from a credit union.

bad scenario: only 5 of us move over, we blow our money on the furnace and utils, UU doesnt rent the church, we dont fill the spots at 2226 so there is no money there to kick in, we still need around $65K at the end of the year, we borrow that with a cosigner at 4%.

1. make checklist for volunteers

A) wash hands in bathroom before start cooking/chopping.
B) wash hands often after handling food/dishes.
c) check if surface has been wiped down with bleach solution before using/
check if towels are soaking in dilute bleach solution
d eyeball food quality before using:
no mold.
process for handling mold: get it out of the building within the hour, dont just put in trashcan.
snuiff test, taste test. it should look ok, smell ok, taste ok. tadting spons, of course, go to wash, not re-use.
check for rotted or dirty parts, cut off as needed.
have a second person give opinion on quality.
e) don't handle food if you are sick.

however, dont be too quick to throw away food robbin would think can be eaten, as long as no mold. set stuff aside for house to use if not serve quality. (a seperate serve fridge would make this easier.)

sometimes prep can be done friday night, or at least one person can start share at 9 am.
too many cooks can make it harder to get at sink to wash hands. don't prep food over sink, usually.
boiling water handy.
it would be nice to have a process where silverware gets dipped in boiling water after being washed after serve.

2. increase roach control efforts. roaches in house makes food less safe.
a) keep clipboard for where/when bug sightings. roaches, bedbugs, moths.
b) use more filprinil cream around kitchen and bathrooms and sinks in rooms.
c) spray at least monthly. clipboard of when sprayed.

3. use a menu. list what you are making, check that all the stuff that got made makes it to the serve. make labels for dishes so our customers know what it is. possible bilingual labels.

set goals to have a soup, salad, bread, fruit plate, every time. water, and tea or coffee, and juice. so somebody running the juicer, can be diluted with drink.

4. have a sign that says "help us out. pick up trash. return your fork to the bucket. next week bring your own cup."
5. bring broom to sweep up cigarette butts from bench area.
6. thermometers in every fridge and most rooms. does dollar store have thermomenters?
write down fridge temps on clipboard once a week.

7. process for asking people who are smoking to set cigarette down before getting food.
8. if items are safe but look "ugly", can they be repurposed into something else?

9. watch "master chef kids edition" for ideas on presentation. follow 9tales suggestion of some gourmet looking dishes, not just slop.

10. using the chafing pans adds to visual appeal. tealight candle or ice bath can help keep hot foods hot cold foods cold. also, coolers with ice or boiling water can help temp control.

43: discarded yogurt can be used to clean drains.

11. when we get the church, set one room to be a pantry,and use an air condition to keep it 50 degrees.

12. fund to buy a commercial dishwasher at auction. don't neglect the volvo fund. food truck as a long term goal.

13. sivlia is right there's too much stuff in the top fridge, you can't find anything.

so a work party, everybody gets a clipboard and an area, and we write down what we've got,and it gets put online.

15. thank you letters during december. this isn't just good PR, it's also their tax reciept and has the 501c3 number. include places like 2nd helpings and marsh and kroger that dont know they've donated to us, but dont put a value or list like we'll do with the others.

these letters, together, could get edited into an annual report. grant-giving agencies like to see annual reports. we got a lot done this year.

among us, we have skills we aren't tapping because we dont know. so a human capital inventory.
